Classique

Chagny Classique range top

The Classique top features an open grate over the central 18,000 BTU burner. This option is ideal for sautéing and searing. A portable simmer plate will accompany this option to round out your cooking needs.

Traditional

Chagny Traditional range top

The Traditional top features a built-in cast-iron French plate over the central 18,000 BTU burner.  Those looking to sauce and simmer with finesse over a large surface area will love the Traditional top. What are the sizes of the ovens?

The Cluny-sized ovens found on the Chagny models are 16w x 12h x 18d. The petite broiler oven is 16w x 6h x 17d.

What are my oven options for the Chagny?

On the Chagny model, there are three ovens.  Two Cluny-sized ovens, and one petite broiling oven.  The petite broiling oven is electric, which automatically defaults the oven below to also being electric.  You will have your choice between gas or electric for the Cluny-sized oven on the right hand side.

The Chagny oven seems small. What will my limitations be?

The Chagny oven is smaller compared to traditional American ovens. The compact oven provides a more efficient use of space, concentrating the heat on the food instead of the empty space. You can fit a roasting pan with a 26 pound turkey inside! Standard-size cookie sheets, casserole dishes, cupcake tins and most dutch ovens will fit inside. The only potential issues you will have are with frozen pizzas and pastry sheets, however, we provide you with pastry sheets that custom fit onto your oven racks.

Are your ovens gas or electric or electric convection?

Your choice! The petite broiling oven on the Chagny is electric, defaulting the Cluny-sized oven below it to also being electric.  You have your choice to make the Cluny-sized oven on the right hand side gas or electric. *Convection is not an option for the Chagny models.

Can I get a convection oven?

The convection fan will take up 2 inches in the back of the oven, so we do not recommend convection for the Chagny models, as you will be losing precious space.

What are the electrical requirements for the range?

All ranges operate on 208-240 volts (for lower voltage needs, please call).  Please refer to our technical pages for further information.

How many premium color finishes do you offer?

We currently offer 23 premium color finishes, in addition to a stainless steel finish.

Which colors are considered to be “upgrades”?

Our matte black finish is considered to be standard, and all other color finishes, including stainless steel, are considered to be premium color finish upgrades.  The color upgrade charge on a Chagny is $900.

What are my trim options?

There are four options: brass, brushed stainless, chrome, and nickel.  Brass is considered “standard” and there will be no upgrade charge. The trim upgrade charge on a Chagny is $400.

What is the lead time on ordering my range?

Lead time for the arrival of your range is dependent on several factors: the size/model of the range you order, upgrading to a premium color finish, and then of course whether or not you choose air vs. ocean freight.  As approximate timelines, it will take up to about 3 months by air/ or about 5 months by boat from the time you place your order for your range to arrive at your house.

*Note: Add 4 weeks if lead time includes August, as the factory is on Holiday during that time. To obtain a more accurate timeline for the specific range you’re interested in, please give us a call at: 1-800-408-2433.

Chagny

A. For the Chagny model, choose an overhead canopy with the following optimum specifications: 42″ wide (48″ for Chagny island applications) x 24″-27″deep.

B. Blowers should be rated at 600-900 cfm, with 8″ round ducting, or equivalent. Size should be measured by the style and quantity of cooking, i.e. Asian stir-fry (vaporized grease) requires higher performance blowers than French reduction (steam).

C. Hood can be mounted to wall or ceiling 30″-36″ (from hood base) off cooktop. Check with your hood company for specific requirements.

Please view here for more detailed ventilation guidelines.

Art Culinaire/Lacanche does not distribute Lacanche hoods.  For recommended hood dealers, please see the list here.
