Each range can have one of two different range top styles: Classique or Traditional. The Classique top has a large, open 18,000 BTU burner in the middle of the range top while the Traditional top has a large, cast iron simmer plate covering the central 18,000 BTU burner.
The Classique burner is designed to deliver intense heat on demand (see Traditional for s-l-o-w cooking). At 18,000 BTUs (5.5kW) of raw power, searing wok temperatures are reached within moments. Stock pots boil at fractions of the time. Canning fresh fruits and vegetables becomes a pleasure again. This burner unleashes a full spectrum of high-heat options in ethnic cuisine, previously unreached. While a Traditional plate offers the same BTUs, its heat is diffused and tamed by the heavy cast iron. Allow 10-15 minutes to reach higher temperatures.
Since simmering is a vital component of French cuisine (sauces), each Classique range includes one removable simmering plate that fits over two side burners with the grate removed. The Traditional Plate simply rests on the cooktop, and - although quite heavy for most - can be removed for periodic cleaning. If desired, you can directly access the Traditional Plate's burner by removing the "manhole cover" over the burner. A wok ring (included with every range) sits securely in the open hole of the Traditional Plate.
Lacanche offers three oven types: Electric, Electric Convection, and Gas (propane or natural gas). The gas oven roasts succulent turkeys and tender meats, while the electric oven is ideal for world-class baking. Most clients that select a double oven range order one gas oven and one electric oven.
