General Accessory Information

Lacanche offers a full range of accessories, fitted specifically to your range and designed to enhance your cooking experience. Each accessory is described below. Some of the accessories have accompanying videos demonstrating their use. Click on the image to see the video.

Wok Ring

Wok Ring Included with each Lacanche range, the cast iron wok ring supports a large wok for stir frying. Design allows flame to envelop wok in a continuous wall of heat. Primarily intended for use above the large 18,000 BTU center burner on either the Classique or Traditional Plate, wok ring also allows use above a 15,000 BTU burner.

Reducing Trivet

Reducing Trivit Included with each Lacanche range, the reducing trivet bridges the gap between the cooktop grates, allowing the use of very small pots over side burners. Cormatin and Cluny models include one reducing trivet. All larger Lacanche ranges are supplied with two reducing trivets.

Grill Plate

Grill Plate An optional accessory, the cast iron grill plate rests over any two side burners, locking on to grate to prevent sliding. Once seasoned, fish, lean meat and vegetables can be rapidly seared without added fats or oils. By setting the back burner to "high" and the front burner to "low" a corresponding heat gradient may be achieved. Imagine up to eight tenderloins grilled at the same time.... each finished to perfection! Grill plate dimensions are 20 inches by 10¼ inches.

Griddle Plate

Griddle Plate An optional accessory, the cast iron griddle plate rests over any two side burners. Ideal for pancakes, French toast, and pan searing its unique design locks on to your Lacanche grate. To ensure even heat across the surface, both burners are typically set to the same level. A three-sided trough and gentle slope allows for adequate runoff. Griddle plate dimensions are 20 inches by 10¼ inches.

Portable Simmer Plate

Portable Simmer Plate Included with Classique ranges, the cast iron portable simmer plate allows all Lacanche range owners to enjoy the functionality of a Traditional Plate. Replicates simmer and sear features of the Lacanche Traditional Plate. Rests securely after removing a side grate and placing over any pair of side burners. By setting the back burner to "high" and the front burner to "low" a corresponding heat gradient may be achieved. Portable simmer plate dimensions are 20 inches by 10¼ inches.

Island Spacer

Island Vent The optional island spacer provides an effective countertop extension between range and island or peninsula countertop and meets UL clearance requirements. Each piece is sized to match range length. For non-combustible walls only, some owners order this vent to replace the wall mounted spacer, included with each Lacanche range.

Splatter Guard

Splatter GuardThe optional splatter guard fits both grill or griddle plate's outer edge. This stainless "shield" protects surrounding surfaces from grease or hot oil splatter. For a nominal charge this may be shipped directly from Art Culinaire. Currently available for delivery via UPS.

Pastry Sheet

Oven Rack

One rolled-steel pastry sheet is included with each Lacanche oven. Pictured is a 15"x15" Cluny sheet on corresponding oven rack. Preferred by pastry chefs for their superior performance over aluminum, each allows even airflow around all four sides. One 13"x19" steel pastry sheet is included with each Sully oven.

Oven Rack

Oven RackTwo chrome-plated steel oven racks are included with each Lacanche oven (Cluny oven rack shown). Rack design allows Lacanche owners to remove dish-laden racks to "check and baste" accordingly. Safety-tip catch ensures rack is stopped prior to being over extended. To accommodate large roasts, a fully extended bottom rack will rest securely on corresponding open oven door.

Drip Tray (shown as a Broiler Pan)

Pastry Tray Pictured is a Cluny-sized tray with chrome broiler insert, included with every Cluny oven. With the broiler insert in place, you are ready to "grill" (broil) inside an electric oven. The drip tray, when used separately, may be placed below any dish or pie-laden pastry sheet to catch spill-overs.

Traditional Plate

Considered "the secret to the perfect sauce" a Traditional Plate is shown with three options: with center disc in place, with disc removed, and with the Wok Ring fitted. Mouse over the thumbnail images to see a larger image of each option. Due to cleaning issues, this feature may not be replaced with Classique burner grates.

Traditional Plate Cover

French Top CoverAn attractive cover is available to protect your Traditional Plate while also providing a generous counter surface when the burner is not in use. For a nominal charge this may be shipped directly from Art Culinaire. Currently available for delivery via UPS.

Plancha

Plancha The plancha — a flat surface made of polished stainless steel — is ideal for searing and cooking food by direct contact. It can be used for a variety of products ranging from sliced vegetables to fish fillets, thin or medium meat cuts as well as fresh slices of goose liver. A key advantage is its short cooking time, with minimal use of fat. The intensity of the heat can be easily adjusted.
