Fontenay

Paradise found?

Sometimes style and performance marry to form a happy union. Your Fontenay – affectionately known in France as le piano – perfectly balances a generously appointed custom cooktop with one or two vertical warming cupboards, centered by a spacious gas, electric or convection oven. Lending itself well to open-wall, hearth, fireplace and alcove stand-alone applications, Fontenay designs often feature a 12” stainless worktop over the storage cupboard – ideal as a preparation area. Add an in-wall pot filler faucet and your cooking suite is complete. Fontenay exudes purpose. With its extra counter space, warming cupboard and storage cupboard, the Fontenay is ideal for caterers and serious home entertainers. A stepped three-burner array is standard, but various extra burners and grills can be added to the open side counters.

Fontenay may be your ultimate cooking machine.

Fontenay model

A. For the Fontenay model, choose an overhead canopy with the following optimum specifications: 66″ wide (72″ for Fontenay  island applications) x 24-27″deep.

B. Blowers should be rated at 900-1300 cfm, with 10″ round ducting, or equivalent. Size should be measured by the style and quantity of cooking, i.e. Asian stir-fry (vaporized grease) requires higher performance blowers than French reduction (steam). C. Hood can be mounted to wall or ceiling 30″-36″ (from hood base) off cooktop. Check with your hood company for specific requirements.

Please see here for more detailed ventilation guidelines.

Art Culinaire/Lacanche does not distribute Lacanche hoods.  For recommended hood dealers, please see the list here.
